A Tuna Sandwich

Great title for this little blog today eh? As I often do these days, I forgot to take something out for dinner yesterday. So, when we got home I was pondering the options. There were a couple of things I could have put together, but when I mentioned making “tuna grinders”, oh my husband piped up, “Yum”. We have fond memories of this sandwich from when we were first married. There was a small restaurant in our town that served these and had the best fries to go with it. If you are not familiar with a grinder, well, it’s tuna salad on a crusty French baguette. Top it with Swiss cheese and slices of green pepper and into the oven to bake for just a bit. What comes out is a warm, gooey, cheesy, tasty sandwich. And…it’s a pretty cheap meal that truly hits the spot.

As I was making the tuna salad last night I got to thinking about those early days of our marriage. We had our struggles financially, with two young kids, we were in our first house, so it wasn’t uncommon to have tuna grinders for dinner. Like other couples just starting out, we also had our share of doctored-up ramen noodles, mac ‘n cheese, and of course hot dogs and baked beans. What I also remember about those early days, we had dinner as a family each night. And…my husband made breakfast for the kids each morning. Actually, he taught our oldest how to read, using his mom’s phonics reading curriculum, over breakfast. Our daughter won the best reader award that year πŸ™‚ . Sorry, I digress.

What I realized last night was that even though we’ve come a long way from those early days of marriage, we’re still ok making a tuna grinder for dinner. We’re okay with being simple. We keep our vehicles until the mileage clicks 100k, we wear our tennis shoes until the tread is almost gone, (because they are comfortable), and our cell phones, well ya we buy new ones when they simply won’t upgrade any longer πŸ™‚ .

It’s okay not to have the shiniest new toys. It’s ok to be simple. When I think of Jesus moving from town to town, He wasn’t looking for the richest people with all the toys, no He spent his time with the poorest who had nothing. If you are like me, you realize that those simple times in life have some of the best memories.

So friends, as you start your day, give some thought to those simpler times in life. Slow down a bit, make a simple dinner, play remember when with your spouse. Stop and enjoy the gifts you have, and raise a thank you to Father for them.
