What’s for Dinner

Most days the question of what’s for dinner is answered before I’ve had my morning shower. There are times though when I have no clue. You’ve probably been there too, you wander to the pantry, look through the fridge, open the freezer, ugh, nothing makes you go, “oooohhh that sounds good”.

Well, if you’ve been reading this little blog recently you know I did some grocery shopping recently to stock up on ingredients for comfort food. Last night I dove into making one such comfort meal, my mom’s stuffed green peppers.

You see growing up, we didn’t have much and my mom was a pretty simple person. She wasn’t one to make over-the-top meals, but what she did make for us were memories. Mom would occasionally talk about the dish she was making, it was from her past, salmon patties her “mamaw” would make when she was a kid, or her mashed potato salad, pinto beans with salt pork and corn bread, or the banana pudding with the dreaded vanilla wafers, (not my favorite), 🙂 .

Last night I pulled out mom’s recipe for the Mexican stuffed green peppers. Just looking at her handwriting made me smile. As I made the recipe, I could literally hear her voice remembering how she would explain exactly what she needed, while writing a shopping list for me to make a run to the store. I put some extra love into the preparation of that dish last night.

As I said, mom was a simple person. She was devoted to her children, made us think for ourselves, instilled values early on, and yes did not hesitate to discipline when needed. Mom adored her grandchildren, she loved her fur babies, (we had many growing up), and she never thought twice about working hard to take care of her family. I’ve tried to impart these same qualities and values to our kids and grandkids.

Mom has been gone 25 years now, and some days it seems like yesterday. I miss you mom, and I look forward to the day when I can hug you again. Oh, and if they don’t have banana pudding there in Heaven, I’m good with that 🙂 .

    Oh Kim, this gave me lump (of memories) in my own throat. And I recall a very similar “halter” dress that my own Mother wore. And the Stuffed Green Peppers – one of my faves! After Mom died Dad continued the ‘tradition’ with Stoeffers (sp?) Stuffed Peppers.

    My own Mom’s other ‘claim to fame’ was angel food cake stuffed with Ice cream and either a chocolate sauce or strawberry oculi (in her hey day simply just mashed strawberry sauce). It did not matter what she “tackled” it was always done to perfection – from setting a table, arranging flowers, breeding and showing poodles. And every once in a while she would ‘break the mold” with an considered avant guard of fashion – from a red and pink linen dress to jewel encrusted wedge 3” slides, and wearing a muumuu on the plane trip back to “staid Portland (Oregon)” .
